What will happen to my posted website when my Dreamweaver Trial Ends? Will it stay fully funcitonal?

If you have already uploaded it then it will still be there and you can use NVU or something to update your site

the site will work, you just wont be able to edit the site using the dremweaver software. If nothing you can always open your site in notepad to edit.
